Introduction:

Kara glue (Carrageenan), also known as LuJiaoCai glue, glue harpoons dishes. Kara glue from some red algae seaweed extract, its chemical hydrophilic gel structure is by galacitiol and dehydration galacitiol consisting of sulfuric acid ester of polysaccharides potassium, sodium, calcium, ammonium salt. Because of the different combination form sulfuric acid esters, can be divided into Kappa type (K), type I (Iota), L (Lambda).

Application:

Kara glue used gelling agents, thickening agents or agent, and can be used for stable emulsion, control, fu off liquid shrinkage, cementation and dispersed. World carrageenan about 70-80% applications in food industry and food manufacturing, including dairy products accounted for 52%, water-binder frozen food and other about accounted for 16% of about 10%. Kara glue soluble fiber, basically is not human digestion and absorption. The United States food and drug administration (FDA) will generally recognized as kara glue to secure food.
